I made the easiest American-style banana pancakes and they were delicious – recipe


Banana pancakes are not only easy to make, but they are healthier than a normal version.

The BBC recipe notes said: “Turn overripe, blackened bananas into sweet and fluffy American-style pancakes.

“Serve with syrup and crunchy, toasted pecan nuts as a delicious brunch treat.”

This recipe makes 12 pancakes in under 10 minutes, and they can also be frozen too.

It also has more than 100 four-star ratings so I wanted to see just how delicious they were.

Ingredients:

350g self-raising flour

One teaspoon of baking powder

Two very ripe bananas

Two medium eggs

One teaspoon of vanilla extract

250ml whole milk

Butter, for frying

Method:

Start by sieving the flour, baking powder and a generous pinch of salt into a large bowl.

In a separate mixing bowl, mash the bananas with a fork and then whisk in the eggs, vanilla and milk.

Make a well in the centre of the dry ingredients, tip in the wet ingredients and whisk together to create a smooth batter.

Heat a little bit of butter in a large pan add two to three tablespoons of the batter to the pan and cook until small bubbles start appearing.

Flip the pancake over and cook for one to two more minutes.

Repeat until all of the batter has been used up and serve with whatever takes your fancy.

These pancakes were super easy to make and they turned out light and fluffy.

They also kept their shape in the pan, unlike some other recipes I have tried.

I love American-style pancakes and I had plenty of leftovers to put in the freezer.

I topped it with popular spreads as well as some fruit for a delicious breakfast.
