Mary Berry’s ‘healthy’ chicken hot pot dinner recipe takes less than 15 minutes to prepare


Now that spring has arrived many people are spending more time outdoors and looking for something tasty yet healthy to fill them up after a long day in the sun.

Mary Berry has a delicious recipe for a chicken hot pot made with flavourful chicken, and tender vegetables made in a rich white wine sauce and then topped with crispy potatoes.

It takes less than 15 minutes to prepare this dish before placing it in the oven to roast and become a succulent meal.

This is the best dinner recipe when you want something homecooked and delicious to eat but do not want to spend ages in the kitchen cooking.

In her cookbook Simple Comforts, Mary wrote: “Hearty, healthy and wholesome, this is the perfect food bowl ideal for an informal gathering. Once the dish is cooked there is lots of tasty sauce, delicious for mopping up with a piece of crusty bread.”

Instructions 

To begin, preheat the oven to 180C (160 Fan or Gas Mark 4). Thinly slice the onions, celery and carrots into small pieces. Peel and slice the potatoes into thin discs.

Melt the butter in the casserole dish, and then add the onions, celery and carrots. Cook over a high heat for a few minutes, making sure to stir to turn over the vegetables frequently.

Place the flour into a mixing bowl and gradually pour in the white wine, then mix until smooth. Add in a little of the hot chicken stock and continue to mix until you have a smooth sauce.

Add the white wine sauce to the vegetables in the casserole dish and then add the tomato puree. Bring the mixture to a boil and add in the chicken, mushrooms, thyme and bay leaves. Then, season with salt and pepper.

Arrange the potatoes in a neat layer on top and slightly overlapping, then season with salt and pepper and gently push the potatoes into the sauce a little.

Cover the casserole dish with a lid and bake in the oven for around an hour until both the chicken, vegetables and potatoes are tender and cooked through.

Preheat the grill, take the dish out of the oven and remove the lid. Place the dish under the grill for five to 10 minutes until the potatoes are golden.

Your delicious chicken hot pot is now ready to serve. Mary Berry highly recommends serving it with some of your favourite green vegetables.
