Make James Martin’s ‘fluffy’ American-style pancakes with bacon in under 10 minutes

Pancakes have been a staple in many people’s diets for years due to how quick and inexpensive they are to make.

They are also incredibly versatile because you can add lots of different toppings, including both sweet and savoury.

James Martin has shared many pancake recipes throughout his career, including his American-style one which features bacon and maple syrup.

The recipe notes said: “Wow – when you really don’t want to hold back, pile all the toppings on these fluffy American pancakes.”

James’ recipe serves four people and can be ready from start to finish in under 10 minutes.


175g plain flour

One teaspoon of baking powder

25g caster sugar

Two free-range eggs, separated

250ml milk

25g butter

12 rashers maple-cured back bacon

Maple syrup, to serve


Start by placing the flour, baking powder and caster sugar into a bowl before stirring them to combine.

Add the egg yolks and milk to the bowl with the dry ingredients and whisk until it becomes a smooth batter.

Next, in a separate bowl, whisk the egg whites until soft peaks form when the whisk is removed, then carefully fold them into the batter.

Heat a large frying pan until hot, add the butter until melted and then place some spoonfuls of the batter into the pan, aiming for a circle shape.

Cook them for one to two minutes, or until bubbles start to form on top, then flip and cook for a further minute.

Remove from the pan and keep warm until ready to serve, repeating the process with the remaining batter.

Meanwhile, add the bacon to a hot frying pan and cook for two minutes on each side, or until crisp.

Remove from the pan and drain on kitchen paper. To serve, divide the pancake among four plates, top with the bacon and drizzle with maple syrup.
