Make a 'golden and crunchy' rhubarb pie in 20 minutes with air fryer recipe

Rhubarb has many standout features, namely its bright pink colouring and tart flavour. The latter is hard to ignore when eaten raw, but the deliciously sweet taste of cooked rhubarb makes up for it.

Crumble, cake, and tart are just a few popular ways to enjoy this summer fruit, but Philips Airfryer chef, Martin Senders, swears by an alternative recipe.

He shared his go-tp formula for a delicious rhubarb pie which he described as “golden and crunchy”.

Comprised of a rhubarb and apple filling with a hint of vanilla, the pie makes for the ultimate summer pudding.

And what’s more, it cooks exclusively in an air fryer so there’s no need to use the oven.


Aside from the quick cooking time and ease of using an air fryer, preparing this rhubarb pie is also very easy.

First, find a round baking dish that fits in the air fryer basket, then grease it with butter and a dusting of flour.

Sprinkle a clean work surface with flour and roll the ready-made shortcrust pastry dough to 30cm or to fit your baking dish. Place the dough in the baking accessory and let the edge hang over, then sprinkle the bottom of the pie with cornstarch.

Next, wash the rhubarb, cut off the leaves and ends and cut the remaining stems into 3cm pieces. Peel the apple, remove the core and cut the apple into cubes.

Place the rhubarb and the apple at the bottom of the pastry case in the dish. To make the remainder of the filling, halve a vanilla bean lengthwise and scrape out the marrow with the back of the knife.

Mix the vanilla marrow in a bowl with three tablespoons of sugar and cornstarch, then sprinkle the mixture over the rhubarb and apple in the pastry case.

Next, beat the egg in a bowl and set aside for later. Fold the overhanging dough back over the rhubarb filling, then brush the edge with the beaten egg mixture and sprinkle the top with a little more sugar.

Place the baking accessory in the basket of the air fryer and bake the rhubarb pie until golden and crunchy for 20 minutes at 180C.

When cooked, slice the pie up and sprinkle with icing sugar and serve.
