Cookies are a fun snack to make, but they can take a while in the oven, so here’s an easy and quick recipe to make them in an an air fryer.
Jamie Oliver’s take on this classic combines cinnamon’s distinctive flavour with zesty lemon touch.
Sharing his recipe for air-fryer oat cookies on his website, the famous chef described the sweet treats as “super easy to make”.
When prepared as instructed, this recipe yields 15 servings, making it perfect to share when hosting or simply save for later.
He tested the recipe in a 4.2-litre air fryer, and all air fryers are different, so results may vary.
Air-fryer oat cookies recipe
Ingredients
85g unsalted butter
20g golden syrup
½ a lemon
140g self-raising flour
100g porridge oats
100g golden caster sugar
One level teaspoon ground cinnamon
½ teaspoon bicarbonate of soda
50g sultanas
Instructions
Melt the butter and golden syrup either in a pan over low heat or in the microwave on high (800W).
Grate the lemon zest finely into a large bowl, then add the other ingredients. Pour the melted butter mixture into the bowl and stir until well combined. Mix in one tablespoon of water.
Divide the mixture into three portions, rolling each portion into five equal-sized balls, totalling 15 balls. Flatten each ball slightly with the palm of your hand. You can freeze the balls at this point if you prefer to bake them later.
Place the balls in the air fryer, leaving a one centimetre space between them (you may need to do this in batches). Cook at 175°C for 15 minutes, then carefully remove the basket or shelf and let the cookies cool for five minutes.
Place the cookies on a wire rack to cool completely while you prepare the remaining batch.
