In today’s episode of Saturday Morning, James Martin invited This Morning GP Dr Ranj Singh on to the show to try some of his latest creations. The celebrity chef served up a feast of lemon sole, salmon en croute, and rhubarb crumble cake. James also demonstrated how to make a pea and ham risotto in his latest masterclass, which went down a storm with viewers.
He began the segment by running through the ingredients before showing viewers how to make the dish.
He explained it’s “a good idea to use both fresh and frozen peas” to get the best results.
He went on to emphasise that it’s important not to colour the shallots and garlic, but just to “sweat them down”.
Although, when it came to adding the peas, the celebrity chef couldn’t help but make a joke about mushy peas.
“Now, we can think about adding some flavouring into this,” he told viewers.
“We want to think about the colour of this and the colour of this comes in the form of some peas, but it also comes in the form of some parsley.
“If you take the stalks of the parsley, get rid of those. If you blanche the parsley, it takes no longer than a couple of seconds to blanche.”
He went on to pop the parsley in a blender to “keep its colour” before adding frozen peas.
He continued: “We want to go on and blend these, not only are they excellent for colour but for flavour.”
“It’s like the Italian version of mushy peas,” he joked.
“I’m going to get letters for that one.”
James proceeded to finish making the dish by adding the rice. He then added the ham as he explained: “Now, all you got to do is keep adding this.
“You want your risotto to be smooth, starchy, but you want it loose if that makes sense.
“Now we can think about the texture of this, so we can think about adding some parmesan cheese.
“It’s so easy to get this wrong, you want to bring the texture back. We can now season it up, add some black pepper and some salt.
“All we do now is get our spoon, get our plate and you can see the texture of this, like that. It’s nice and loose.”
Viewers were loving today’s instalment and many took to Twitter to praise James for such an entertaining show.
Others saw the funny side of his joke about making Italian mushy peas.
One fan penned along with a laughing-face emoji: “I’m loving the Italian mushy peas.”
Another commented: “The risotto looks fab – I love the way he explains everything – that’s why I love him.”
One added: “Love risotto but I have never had the confidence to cook it. Watching you I may give it a go!”
